What are the benefits of collagen?
I love adding collagen peptides to recipes (especially easy in baked goods and smoothies!) as it may help reduce wrinkles, strengthen hair, nails, bones & joints and improve gut health. It can also help you stay fuller longer!
What collagen should I use?
I created this recipe using Further Food Chocolate Collagen Peptides because not only does it provide extra chocolate flavor, but I also trust the quality of the ingredients. It’s made with just 4 real-food ingredients (premium collagen, cocoa powder, reishi mushroom and monk fruit), sugar-free, is 3rd party tested, purity tested, tested for heavy metals and kosher certified. Always sourced from grass fed, pasture-raised cows. No hormones, no antibiotics!
I also love that it has the addition of mood-boosting Reishi mushroom. Reishi mushrooms are known in Chinese as lingzhi, which means āmushroom of immortality.ā This powerhouse mushroom has been used for its immune boosting benefits in treating everything from flu to cancer.

What flour should I use?
A fine almond flour from blanched almonds works best.
I have not tried this recipe with another flour. All-purpose or oat flour may work. I would strongly advise against using coconut flour, as it has a very different absorbency and would require all different measurements/ingredients.
What sweetener should I use?
The same amount of regular granulated sugar, coconut sugar or honey should work just fine (however I have not tried those yet!). You could also try using monk fruit sweetener, however I usually find that to be sweeter and require less of.
As always, if you make this Easy Microwave Brownie For One or any of my other recipes Iād love to know how they turned out. Please leave a review, and be sure to tag me on Instagram @Hungry.Blonde! xoxo GG
