High Protein Lasagna Casserole

This High Protein Lasagna Casserole is healthier comfort food at its finest. Flavorful, filling and so easy to make in less than an hour. The whole family will love it! 

Ingredients

  • 8oz pasta of choice*, cooked as directed
  • 1 tablespoon olive oil
  • 1 pound grass-fed ground beef
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • one 24 oz jar marinara sauce (I like Rao’s)
  • 16oz whole milk plain cottage cheese
  • 1/2 cup full fat plain Greek yogurt
  • 1 1/2 cups shredded mozzarella cheese + some more for topping
  • 1/2 cup shredded or grated parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried oregano

Instructions

  1. Preheat oven to 350 degrees and grease a 9×13 baking dish
  2. Add oil to large stovetop pan and heat to medium. Season ground beef with salt and pepper and cook until browned, about 5 minutes
  3. Add jar of sauce the the pan and cook on low for another 5 minutes
  4. In a large bowl mix together cottage cheese, Greek yogurt, mozzarella cheese, parmesan cheese, salt, pepper and spices
  5. Add pasta to the bottom of baking dish then top with the cheese mixture, then the meat/sauce mixture
  6. Bake for 20-25 minutes. Top with some more shredded mozzarella and bake for another 5 minutes

* you can use egg noodles or lasagna noodles for the most lasagna-like texture, but any (regular or gluten-free) pasta will work
