While I love getting creative in the kitchen and trying new recipes, the truth is I can be quite the creature of habit with my meals. Here are 3 easy go-to meals that I’m always eating on repeat. They all take 15 minutes or less to make and are made with ingredients that are easy to always have on hand.
egg + veggies scramble with toast
You’ll never not find frozen vegetables in my freezer – the make life so much easier because I’m not worrying about fresh vegetables going bad. I usually heat a combo of broccoli & spinach in the microwave, then whisk in 2 eggs & some spices (sometimes an extra protein like sausage or ham), make a scramble, and usually top with some cheese. Then for the toast I usually go with an Ezekiel english muffin or Free Bread, topped with either smashed avocado or peanut butter.
cauliflower rice “power bowl”
I’ve been eating power bowls like this on repeat for years – they’re super filling and you can really use any combo of vegetables or protein. Cauliflower rice is also something I keep frozen, and then I cook it stovetop with ghee or olive oil and salt, pepper & garlic powder. Cook it until it’s soft and slightly brown. Then I add in other vegetables, a nice source of protein and avocado.
pasta + veggie bowl
This one is probably my favorite because I’ve been a pasta gal since I was a kid. I’m always stocked up on Banza chickpea pasta because it’s got more protein and fiber than regular pasta, plus it’s gluten-free. Then I usually add in some vegetables, sometimes a protein, and some sort of sauce to bring it all together – usually my cauliflower cream sauce, sweet potato “cheese,” avocado cream sauce, or keep it simple with some good ol’ butter.
