When my son hit about 18 months he seemed to suddenly need a snack right when he opened his eyes in the morning. So, to buy time before breakfast I give him little “pre-breakfast” snacks that are just enough to hold him over without filling him up. He became totally hooked on my easy energy bites. They are simple, delicious, made with healthy ingredients, and zero refined sugar! In fact, they are only sweetened with dates. They take just 5 minutes to make, and all you have to do is throw all the ingredients in your food processor. Honestly, what more could you ask for?

This recipe for easy energy bites requires just four ingredients plus it’s toddler and kid friendly without any refined sugar! It doesn’t get better than that.

Ingredients
- 1 cup pitted medjool dates
- 1/4 cup creamy nut butter of choice
- 2/3 cup oats
- 1 tablespoon coconut oil, melted
Instructions
- Place dates in food processor and pulse until it reaches a paste-like consistency
- To the food processor add nut butter, oats and coconut oil. Pulse/blend until fully combined
- Transfer to a bowl and use your hands to form into a dough*
- Form dough into 10-12 small balls, and refrigerate for at least 15 minutes to set. Keep stored in the refrigerator

*If the mixture is still too dry after combining with your hands, you can add an additional 1/2 teaspoon of melted coconut oil at a time until it combines fully

Ingredients and Substitutions for Easy Energy Bites
What dates should I use?
So, I’d recommend using organic, pitted dates. And my favorite brand is Joolie’s Dates.
What nut butter should I use?
In this case, any creamy nut butter would work great! I love using almond butter, peanut butter or cashew butter. If you want to make these energy bites allergy-free, then you can use sunflower seed butter.
What oats should I use?
I personally love using the Purely Elizabeth Superfood Oatmeal for this recipe because it adds healthy ingredients like chia seeds and quinoa flakes. However, you can use any oats you like . In fact, regular rolled oats or quick cooking oats would work great in this recipe!
Can I add any other mix-ins?
Absolutely! Some delicious ingredients to add are any dried fruits, nuts*, or chocolate chips.
* depending on your child’s age, be careful as nuts can be choking hazard.
Plus, this recipe can easily be doubled or tripled if you want to freeze! To enjoy simply thaw on the counter.
