Easy & Classic 30 Minute Tomato Soup

This is the best EASY homemade tomato soup! A classic tomato soup that kids and adults will love, especially when served alongside a grilled cheese sandwich. The perfect cozy winter comfort food.

Ingredients

2-3 tablespoons olive oil
1/2 cup yellow onion, diced
4 cloves garlic, minced
1 cup carrot, diced
one 28oz can diced or crushed tomatoes
4 cups vegetable (or chicken) stock
1 teaspoon salt
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/4 teaspoon black pepper
2 bay leaves
1 cup milk or cream

Instructions

  1. Add olive oil to a large pot and turn to medium heat
  2. Cook onion and garlic in olive oil for 3-4 minutes, then add the carrot and cook for another 5 minutes
  3. To the pot add tomatoes, broth and seasonings and stir well to combine
  4. Turn heat to high, allow soup to come to boil, then turn down to medium low and let simmer for 20 minutes
  5. Remove bay leaves. Use an immersion blender to blend soup until creamy (or you can transfer to a blender) and then stir in the milk
  6. Serve hot with croutons or a grilled cheese sandwich
