Ingredients
2-3 tablespoons olive oil
1/2 cup yellow onion, diced
4 cloves garlic, minced
1 cup carrot, diced
one 28oz can diced or crushed tomatoes
4 cups vegetable (or chicken) stock
1 teaspoon salt
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/4 teaspoon black pepper
2 bay leaves
1 cup milk or cream
Instructions
- Add olive oil to a large pot and turn to medium heat
- Cook onion and garlic in olive oil for 3-4 minutes, then add the carrot and cook for another 5 minutes
- To the pot add tomatoes, broth and seasonings and stir well to combine
- Turn heat to high, allow soup to come to boil, then turn down to medium low and let simmer for 20 minutes
- Remove bay leaves. Use an immersion blender to blend soup until creamy (or you can transfer to a blender) and then stir in the milk
- Serve hot with croutons or a grilled cheese sandwich

really delicious! quick and easy and had a lot of flavor. I ended up only filling my blender halfway with the hot soup and covering it with a paper towel when blending to let steam out, and that worked really well to prevent it from overflowing while blending.
