If you’ve been following me for a while you’ve probably seen me post about Zing Bars – they’re hands down one of my favorite bars on the market. I love that they’re free of common allergens, have 10g of protein, ingredients I can pronounce, and of course taste amazing.
I usually eat Zing Bars as a quick snack when I’m out and about in the city, but recently I started including them as an ingredient in some of my favorite meals, and the result has been nothing short of drool-worthy.
I mean, do I even have to explain why you should want to make these Plant-Based Dark Chocolate Peanut Butter Pancakes?
Dark Chocolate Peanut Butter Pancakes
Recipe adapted from Layers Of Happiness
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons baking powder (makes them extra fluffy!)
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 1/2 cups dairy free milk (I used almond milk)
- 1 Dark Chocolate Peanut Butter Zing bar, cut into 1/4 inch cubes
- 1-2 tablespoons creamy peanut butter
- 1-2 tablespoons pure maple syrup
Try not to sneak a bite of the Zing bar in the process…it won’t be easy 😉
Directions:
- Whisk together the flour, baking powder, sugar & salt. Slowly whisk in the milk, then fold in the Zing bar cubes.
- Spray a large nonstick pan or griddle with nonstick spray and heat to medium-high.
- Use a 1/4 measuring cup per batter for each pancake. When small bubbles appear, flip the pancake and let cook on the other side for just 1-2 minutes (or until golden).
- Repeat with remaining batter and use more nonstick spray as needed.
- Serve pancakes stacked with a smear of peanut butter in each layer and top with maple syrup.
