Every so often I come up with a recipe that makes me thing daaaang girl, you done good. And these air-fried Butternut Squash CRACKER-Crusted Chicken Tenders are the latest in that category.
To make them you’ve got to get your hands on From The Ground Up Butternut Squash Crackers ~ they’re gluten-free/non-gmo/vegan, and you can find them on Amazon or at Whole Foods. Then try not to eat the entire box right away (that will be difficult, but I believe in you 👊🏼). Full recipe below!
Butternut Squash Cracker-Crusted Chicken Tenders
Ingredients:
- 2 large chicken breasts, cut into tenders
- 2 eggs, beaten
- 2 cups From The Ground Up Butternut Squash Crackers
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp garlic powder
- 1 tsp nutritional yeast (optional)
Directions:
In a food processor or blender, grind/pulse the Real Food From The Ground Up Butternut Squash Crackers until they reach a breadcrumb-like consistency. Place beaten egg in a shallow bowl. In a separate shallow bowl combine the cracker crumbs and spices. Dip the chicken tenders in egg to coat thinly, then dredge them in the cracker mixture. Grease air fryer basket with cooking spray, then air fry the chicken tenders for 15-18 minute at 350 degrees, or until cooked on the inside and golden brown on the outside.
