The Magic of Cookie Bread Recipes ✨
Okay, so this all started because I *love* cookies. I truly believe that there is nothing a good cookie can’t fix. Then, one day, I was trying to think of ways to put a spin on this long-time favorite. Suddenly, it hit me: Why not make my favorite cookies into… bread? Now, I get that sounds a little odd, because bread and cookies, well they aren’t quite the same. However, with all the crazy dessert combos out there, why not marry cookies and bread?!
Thus, my series of Cookie Breads was born with the Sugar Cookie Bread. This is a bold statement, but the moment I took a bite, I thought to myself, this is the best thing I have ever baked.
What You Get When You Make Cookie Bread Recipes
Every one of these recipes yields a deliciously sweet bread reminiscent of its respective cookie. They are great to make around the holidays, because they can serve a crowd. However, I think that these breads are fun to make (and eat!) any time of year, and any time of day — they make a great dessert for breakfast (; What’s more? All of these recipes can be made gluten-free by swapping out the flour for 1:1 gluten-free flour like this one from Pillsbury or Bob’s Red Mill.

1: Sugar Cookie Bread
This Sugar Cookie Bread combines the flavor of sugar cookies with the texture of a light pound cake, with a sweet glaze and festive sprinkles to bring it all together. If you use green and red sprinkles, then this is the perfect holiday treat. However, this recipe is good all year round — all you have to do is switch up those sprinkle colors!
2: Oatmeal Cookie Bread
Oatmeal cookies get a bad rap. Why that is? Truly, I don’t know! And that’s why I decided to give them a twist that will prove — once and for all — that they deserve a place on your favorite cookie list. One taste of this Gluten-Free Oatmeal Cookie Bread and you’ll be rethinking your stance on this controversial cookie (or falling even more in love with these warm and cozy flavors).
3: Monster Cookie Bread
A Monster Cookie, if you aren’t familiar, is a cookie that doesn’t hold back. In fact, they are one of the most loaded cookies out there. A traditional Monster Cookie has peanut butter, chocolate, M&M’s, and oats. The addition of the oats lends this cookie a denser, chewier texture. My Monster Cookie Bread keeps the integrity of the original, but in the form of soft and dense cake bread.

If you’re a mint + chocolate lover, this Thin Mint Sugar Cookie Bread is the dessert for you. It’s a soft & fluffy cake bread with the flavor of peppermint, chocolate chips, and a silky chocolate glaze. When I tell you that covering your bread in a layer of sweet chocolate really takes it to the next level… I mean it takes it to the next level. Plus, it’s gluten-free!
5: Cinnamon Crunch Sugar Cookie Bread
Who doesn’t love a warm cinnamon roll in the morning? This Gluten-Free Cinnamon Crunch Sugar Cookie Bread has all of the warm and cozy flavors of a cinnamon roll, baked into a soft and fluffy dessert bread. It’s perfect with coffee, and it’s basically dessert for breakfast. Now what could be better than that?
6: Candy Cane Sugar Cookie Bread
This one is a delicious and unique holiday treat! Candy canes are, of course, a Christmas staple, but what if we took them up a notch? This Candy Cane Sugar Cookie Bread is light and sweet with just a hint of peppermint. The crunch of crushed candy canes on top gives it a super fun texture, too. In addition, it can be made gluten-free.
7: Chocolate Chip Cookie Bread
Chocolate chip cookie meet dessert bread 🤝 this loaf is chocolate, chewy, and decadent. It’s all the favorite flavors of the OG cookie combined with the texture of a sweet dessert bread. The best part is that this Chocolate Chip Cookie Bread can be enjoyed both as a dessert (I like it warm with ice cream!), and as a sweet breakfast (it goes great with coffee!). Plus, it can be made gluten-free!
8: Birthday Cake Bread
So, this recipe might not have the word *cookie* in its title, but my Birthday Cake Bread is a fun(fetti) version of my sugar cookie bread that I couldn’t leave out of this round up 😉 This sweet bread is denser than traditional cake with a secret ingredient that makes it particularly flavorful. Plus, it’s gluten-free!
How To Make All Of These Cookie Bread Recipes Gluten-Free:
If you want to make these recipes gluten-free, then you will need to swap out the flour.
Be sure to use a 1:1 gluten-free flour in this recipe. In this case, I used this one from Pillsbury, which I found at my local grocery store and I loved how it worked in this recipe. In addition, my other favorite is by Bob’s Red Mill.
However, please note that you can’t use just any gluten-free flour because some of them require different measurements, etc. so be sure to opt for one that clearly says it’s a 1:1 swap for regular flour.
