Okay okay, I know I’ve been sharing a lot of mousse recipes lately. But can you blame me??? A fluffy, light-yet-decadent dessert you can dive in with a spoon…I mean, there are just few things better. And this Collagen Chocolate Mousse is SO simple with just 2 ingredients. I’ve been making it nonstop, and I think you’re going to love it too.
Collagen Chocolate Mousse (dairy-free, keto friendly)
Ingredients:
- 1 can of coconut cream or full fat coconut milk, refrigerated at least for a few hours *
- 1-2 scoops chocolate collagen powder (I used Ancient Nutrition)
Directions:
- As noted above, make sure the coconut cream has been refrigerated for at least few hours for it to harden and separate. More details on that below.
- Transfer coconut cream to a large bowl and beat until it becomes smooth and fluffy. Then beat in the chocolate collagen powder.
- Eat plain or topped with cacao nibs, fresh fruit, etc. Store in an airtight container in the fridge for up to 3 days.
*A note on the coconut cream/milk: if you can find Native Forest canned coconut cream, I’ve found that always works best! It comes in a smaller can so use 2-3 of them. Otherwise you definitely need FULL FAT coconut milk. After it’s refrigerated, the cream part hardened and rises to the top – that’s what you want to scoop out and use. Don’t use the liquid that is left at the bottom of the can.
This is such a good go-to, nightly dessert that is full of healthy fats and the benefits of collagen. I don’t know about you, but I love knowing I’m getting health benefits even when I’m eating dessert!
