Gluten-Free Cinnamon Crunch Sugar Cookie Bread

This Gluten-Free Cinnamon Crunch Sugar Cookie Bread is all of the warm and cozy flavors of a cinnamon roll, baked into a soft and fluffy dessert bread. Perfect for Christmas morning!

Filling Ingredients:

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Bread Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/3 cup 1:1 gluten-free flour *
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt

Glaze Ingredients:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 350 degrees
  2. Place filling ingredients in a bowl and combine well. Set aside
  3. In a large bowl mix together butter and sugar, then add in egg and vanilla. Lastly mix in milk until all wet ingredients fully combined
  4. In a separate bowl mix together flour, baking powder, baking soda and salt
  5. Add dry ingredients to wet ingredients and mix just until combined
  6. Transfer half of the batter to a parchment-lined + greased 8½x4½ inch loaf pan, then evenly sprinkle on the filling mixture, saving about 1 tablespoon for topping
  7. Pour remaining batter over filling layer. It’s a little tricky to spread over the delicate filling, but using your fingers helps. It doesn’t have to be perfect!
  8. Sprinkle top with remaining cinnamon sugar mixture
  9. Bake for 45-50 minutes**, or until a toothpick comes out clean. Be sure not to over-bake!
  10. Let cool for at least 60 minutes in pan (this one is delicate), then use a butter knife along edges to remove and transfer to a cooling rack. Let cool completely before topping with glaze
  11. To make the glaze, whisk powdered sugar and milk until a smooth consistency, adding more milk if needed
  12. Pour/spread glaze over the bread

Notes

The combo soft cake + crunchy filling does make this one a bit tricker to slice, so be careful! If it crumbles a bit it’s fine, it’s so delicious you won’t care 😉

* Be sure to use a 1:1 gluten-free flour in this recipe. I used this one from Pilsbury, which I found at my local grocery store and I loved how it worked in this recipe. My other favorite is by Bob’s Red Mill.

If you are not gluten-free, simply use regular all-purpose flour, same measurements.

** Using all-purpose flour may cut down baking time. Check it around 40 minutes, it’s done baking when a toothpick comes out clean.

Store in an airtight container for up to 5 days
