If these cookies look like those classic Hershey Kiss Peanut Butter Blossoms we all know and love, that’s because that’s exactly what I was going for. These Chocolate Peanut Butter Cookie Cups give the classic recipe a run for its money, though, because they’re full of that chocolate + peanut butter goodness while also being grain, gluten & dairy free.
Grain-Free Chocolate Peanut Butter Cookie Cups
(yields 15-20 cookies)
Ingredients:
- 3/4 cup creamy peanut butter
- 1/2 cup pure maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup + 2 tbsp finely ground almond flour
- 1 tsp baking soda
- 1/8 tsp salt
- 1/2 cup dairy-free chocolate chips
- 3 tbsp full fat coconut milk (from a can)
Directions:
- Preheat your oven to 350 degrees. Line a mini muffin pan with liners + spray with nonstick spray to ensure cookies come out clean.
- In a large bowl whisk together peanut butter, maple syrup, egg and vanilla extract.
- In a separate bowl combine almond flour, baking soda and salt.
- Add dry ingredients to wet ingredients and combine well.
- Scoop the dough evenly between the mini muffin cups and make a small dent in the center. The dough is pretty sticky, so it might help to grease your fingers a little bit.
- Bake for 8-10 minutes and let cool completely.
- To make the chocolate filling, combine chocolate chips and coconut milk in a microwave safe bowl and heat for about 60 seconds. Whisk together until chocolate is smooth.
- Pour a small spoonful of chocolate into each cookie cup and let harden for at least 20 minutes (or quicker in the fridge). Store cookies in the refrigerator for up to a week or in the freezer for longer.
These cookies are dense, chewy, and an oh so perfect healthier treat for the holidays. They’re insanely delicious fresh out of the oven, but I almost like them even better once they’ve hardened up a bit in the fridge.
You can definitely make these using a different nut butter (almond butter or cashew butter would be amazing), but I can’t help but love myself a good old-fashioned peanut butter cookie.
