I’m bringing you Chocolate-Dipped Coconut Shortbread Cookies on this Cookie Friday! Few things are certain in this life, but dipping cookies into a chocolate coating absolutely is.
These Chocolate-Dipped Coconut Shortbread Cookies have a great dense & buttery texture, the perfect amount of coconut flavor, and a simple chocolate coating that brings it all together.
Chocolate-Dipped Coconut Shortbread Cookies
Ingredients:
- 3/4 cup gluten-free baking flour (I love Bob’s Red Mill 1:1)
- 1/2 cup coconut flour
- 1/4 cup shredded unsweetened coconut
- 1 stick butter, melted
- 2 eggs
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1/3 cup Hu chocolate gems (code GRACIE for free shipping)
- 1 teaspoon coconut oil
Directions:
- Preheat oven to 350 degrees and line baking sheet(s) with parchment paper
- In a large bowl combine both flours and coconut
- In a separate bowl whisk together butter, eggs, maple syrup and vanilla
- Add wet ingredients to dry ingredients and combine well
- Form into 12-14 cookies, pressed down slightly. Bake for 13-15 minutes and let cool completely
- To make the chocolate coating melt the chocolate chips and coconut oil stovetop or in the microwave
- Dip 1/2 of each cookie in the chocolate and place back on parchment-lined baking sheet or plate until the chocolate hardens
I love how these turned out! The coconut flour adds a great flavor and heartiness to these cookies, but the coconut flavor isn’t overbearing.
I *wouldn’t* recommend using all coconut flour in this recipe because it’s very dry and doesn’t lend to a great texture. The combo of the coconut flour + gluten-free baking flour works really well.

First recipe I tried off this site, they came out awesome. Subbed all-purpose flour for GF because of what I had on hand but will try GF next time. Subtle coconut flavor, quick to put together, beautiful and delicious when they came out. Did add some flaked sea salt for personal preference, definitely would recommend.
