Ingredients
- 1 stick unsalted butter, melted
- 1 cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- pinch of salt
- 1/2 cup semisweet chocolate chips
- 1/2 cup pretzels, crushed
- mini pretzels for topping (optional)
Instructions
- Preheat oven to 350 degrees. Grease or line 8×8 baking dish with parchment paper
- In a large bowl whisk together butter and sugar, then mix in the egg and vanilla
- Add flour and salt, combine well
- Fold in chocolate chips and crushed pretzel pieces
- Transfer batter to baking dish and spread evenly. Top with mini pretzels and press down slightly
- Bake for 23-35 minutes
- Let cool for at least 30 minutes before cutting into squares

Baking Guide and Ingredient Substitutes for Chocolate Chip Pretzel Cookie Bars
- Don’t over-bake! It might seem like it’s not done, but their gooey center just needs a good amount of time to set before cutting. Trust me on this one.
To make these blondies gluten-free:
- So, you can use your favorite 1:1 gluten-free baking flour – I love Bob’s Red Mill, Pillsbury and King Arthur brands
- Oat flour also works as a gluten-free option,
- Almond flour should work, although I have not tried it. If you use this, then cookie bars may not hold together quite as well.
- I would not recommend using coconut flour as it has a very different absorbency and would alter the measurements of all other ingredients.
Variation + mix-in options:
- You can use whatever chocolate chips or mix-ins you like! This recipe is very versatile and easy to make for any occasion. Generally, I like sprinkles, M&Ms, and crushed nuts.
- You can take these up another notch by adding your favorite frosting. I always love making my easy cream cheese frosting.
- Pro tip: Enjoy these cookie bars warmed up and topped with vanilla ice cream.
