It’s Cookie Friiiiidayyyyyy. That’s exactly how I say it out loud, FYI. And today I’ve got a pretty simple recipe for ya: Chocolate Chip Peanut Butter Cookies that are grain-free and low in sugar. You’ll also need just five ingredients to make them!
Peanut Butter Chocolate Chip Cookies
(yields 14-16 cookies)
Ingredients:
- 1 cup creamy natural peanut butter
- 1/3 cup coconut palm sugar (could also use brown sugar)
- 1/4 cup almond flour
- 1 egg
- 1/2 cup Hu Kitchen Gems (code GRACIE for free shipping!)
Directions:
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper
- In a large bowl mix together peanut butter, coconut sugar and egg, then mix in the almond flour, and lastly the chocolate gems
- Refrigerate dough for 10 minutes
- Form dough into balls (about 2 tbsp each) and place on baking sheet. Press down with a fork to flatten
- Bake for 10 minutes. Let cool on baking sheet for 2-3 minutes then transfer to a cooling rack
- Store in airtight container for up to a week, or longer in the fridge
These Chocolate Chip Peanut Butter Cookies are similar to the classic recipe we all know and love (the fork criss-cross is a dead giveaway, no?) but less sugar + more chocolate. Not a bad twist on the classic, if I do say so.
However you could omit the chocolate chips, which would make these cookie almost keto-friendly, I think? Or add in other things like m&ms, nuts, a nice Hershey kiss smack dab on top. It’s also a really easy recipe to double.
