These chewy, gooey chocolate chip cookie bars that are made in a snap seem almost too good to be true. It’s no wonder they’re one of my most popular recipes!
So, this recipe is such a crowd-pleaser that you’re probably going to want to double the recipe. Good thing is, it’s super easy to do! No doubt, this recipe will definitely become one of your go-to’s when baking for a group or party.
You can also get creative with different variations of these Cookie Bars by adding different mix-ins. More on that below.

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup dark brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- pinch of salt
- 1/2 cup semisweet chocolate chips
Instructions
1. Preheat oven to 350 degrees. Grease or line 8×8 baking dish with parchment paper
2. In a large bowl whisk together butter and sugar, then mix in the eggs and vanilla
3. Add flour & pinch of salt and combine well, then mix in chocolate chips
4. Transfer to baking dish and bake for 23-25 mins
5. Let cool for at least 30 minutes before cutting into squares

Some notes on this recipe…
Don’t over-bake!
These cookie bars need at least 30 minutes to cool once out of the oven. Their gooey center just needs a good amount of time to set before cutting.
Can I make these cookie bars gluten-free?
So, you can use your favorite gluten-free baking flour (I love Bob’s Red Mill 1:1) or oat flour.
Almond flour may work, however I have not tried it in this recipe. It may not hold together quite as well as regular flour.
I would not recommend using coconut flour as it has a very different absorbency and would alter the measurements of all other ingredients.
What chocolate chips (or other mix-ins) should I use?
- You can use whatever chocolate chips or mix-ins you like! Semisweet, milk, dark, or white chocolate chips will work perfectly
- Some other delicious options are M&Ms (especially red & green for the holidays!), crushed nuts, and even crushed pretzels for some sweet & salty action

And lastly, a VERY important suggestion: you heat up a nice big slice and top it with ice cream. Your life will never be the same š

These bars were missing something. Iām thinking baking powder or baking soda. They still taste good but something is missing. They didnāt rise like cookies do, so it felt more like solid cookie dough than a baked cookie.
