This blog post {Chicken Gnocchi Soup + Healthy Meal Plans Review} is sponsored by Healthy Meal Plans. Thank you for supporting the brands that make this blog possible!
For as long as I can remember, I’ve had a love/hate relationship when it comes to meal planning. I’ve loved the idea of it – the convenience, the chance to experiment with new recipes, etc. – but it always ended up feeling too much work for me to do both the planning and the cooking.
So when I was approached with the opportunity to try Healthy Meal Plans, I was excited to see if it would be a good fit for me and my lifestyle.
What is Healthy Meal Plans?
Healthy Meal Plans is a resource that helps guide you through the meal planning process from start to finish. They have hundreds of recipes to choose from (ranging from all types of cuisines, dietary preferences, etc.) as well as an actual meal plan template, and then another easy template for making a grocery list.
That’s just the basics of it, because the truth is that there are *so* many ways to customize your account and meal plans! I’m going to be totally honest with you – I was *not* expecting to be so impressed with the platform. I really believe it fills a need that so many people have (including myself).
I had so much fun exploring the site, so here’s a quick run-through of what it looks like.
Why I love Healthy Meal Plans
Healthy Meal Plans does the work for you
In the past when I’d try to meal plan, I felt like I was all over the place with no actual plan (oh, the irony). I’d find myself bouncing through dozens of different websites, Pinterest, Instagram, and no way to really organize the recipes I found. Not only do you get the recipes, but it put’s everything into your own meal planning calendar and provides the grocery list of everything you need
Easy personalization
With that said, there are tons of options to customize your Healthy Meal Plans experience. You can add your very own recipes, select specific dietary preferences, create your own meal plan, and the website even will adjust ingredients/measurements if you change the selected serving size (a personal favorite feature of mine).
It’s user friendly
Within just a few minutes of logging into my Healthy Meal Plans app, I knew what I was doing. There are easy actions like “favoriting” recipes, drag & dropping them into a desired meal plan, adjusting & printing the grocery list, and so on.
Hundreds of amazing recipes
There are hundreds and hundreds to choose from – options that are great for weekday meals or also if you want to make something to entertain others. It’s also easy to search for what recipe option you might be looking for based on dietary preference and even down to specific ingredients.
This recipe for Chicken Gnocchi Soup is actually one I found while browsing Healthy Meal Plans, and I added it to my existing (Omnivore) Meal Plan.
I *loved* this recipe! The directions were so easy to follow, and I loved that it’s made with simple + nutritious ingredients that made for a super cozy wintertime soup. Here’s how I made it.
Chicken Gnocchi Soup
(recipe below is 4 servings, I adjusted mine to 2)
Ingredients
- 1 tbsp oil
- 1 yellow onion, diced
- 1 garlic clove, minced
- 2 cups shredded or diced cooked chicken
- 4 cups chicken broth
- 1 lb gnocchi
- 1 cup frozen peas and carrots
- 2 cups baby spinach
- salt and pepper to taste
Directions
In a large pot, heat the oil over medium-high heat. Add the onion and cook, stirring, until it begins to soften, about 3 minutes. Add the garlic and cook until it becomes fragrant, about 30 seconds. Add the chicken and broth. Bring the mixture to a boil and add the gnocchi. Stir in the peas and carrots. Add the spinach and season with salt and pepper to taste. Continue to cook until the spinach has wilted, about 2 to 3 minutes.
Serve immediately or store in the refrigerator for up to 3 days.
It’s completely FREE to sign up for Healthy Meal Plans, but to get all of the benefits of Healthy Meal Plans I definitely recommend taking advantage of their dietitian-prepared Subscription Meal Plans. There are all sorts of options like vegan meal plans, pescatarian meal plans, gluten-free and more. I’ve been using their 12-week Omnivore plan and am truly enjoying it.
