I’ll be posting this Cheesy Cauliflower Rice Taco Bowl on Instagram today, but it was so delicious it landed a well-deserved spot here on the blog too.
This is such a great weekday meal for either lunch or dinner. It’s a solid twist on my go-to “power bowls” – easy to keep the ingredients on hand, especially since most of them can be bought/stored in the freezer. Here’s how to make it!
Cheesy Cauliflower Rice Taco Bowl
(yields 2-3 servings)
Ingredients:
- 1 tbsp olive oil
- 1/4 cup diced onion
- 3 1/2 cups riced cauliflower, raw (I get mine pre-riced from Hungryroot, you can use code DWX07Q for $30 off your first box)
- 1 cup riced broccoli, raw (also pre-riced from Hungryroot)
- 1/2 cup frozen spinach, thawed
- 1 tsp Primal Palate taco seasoning (or more, but it’s pretty spicy)
- 2 chicken breasts, cooked & cut into 1 inch cubes
- 1/2 cup shredded Mexican cheese blend
- 1/4 cup salsa
- optional toppings: guacamole, sour cream, green onion, red onion, cilantro, whatever you’d like!
Directions:
- In a large stovetop pan heat oil to medium and begin by cooking the onions for a few minutes, until softened.
- Add in the cauliflower rice, broccoli rice & spinach. Cook for 8-10 minutes, or until soft & slightly browning, stirring frequently. Add more oil as needed to avoid sticking to pan.
- Turn off heat and mix in the taco seasoning, chicken, and cheese. Combine well and the cheese will melt throughout.
- Serve with toppings of choice.
Not only is this bowl packed with flavor, it’s also full of (AKA mostly) vegetables! Plus you get a good punch of protein from the chicken, so this is a great FILLING meal. It’s also Keto-friendly and Paleo/Whole30 if you omit the cheese, but I probably wouldn’t recommend that if I were you 😉
