Honestly, thank goodness for Trader Joe’s and their pre-made/frozen section. What did I do before this grocery store?! As a busy mom, I am always looking for ways to simplify my meals, and Trader Joe’s has helped so much. So, you know how sometimes frozen food just really… well, it’s terrible. Honestly, I have not found that to be the case with Trader Joe’s. Especially not with these chicken tenders! Of course, we have to get our veggies in somehow. Enter: This salad.
Ingredients to make Trade Joe’s Buffalo Chicken Chopped Salad
🥗 TJ’s Southwestern Chopped Salad Kit
🍗 TJ’s frozen breaded chicken
🌶️ TJ’s vegan buffalo dip
🥑 diced avocado
- Cook breaded chicken as directed then cut into 1-inch pieces
- Toss chicken with a few spoonfuls of vegan buffalo dip until evenly coated
- Prepare the chopped salad as directed, then top with / mix in buffalo chicken and avocado
You can either make one large salad with the entire kit, or use 1/4 at a time to last for a few days of lunches! In addition, you can spice up this recipe by using other ingredients in your salad, like cheese or tomato or black beans. There are many delicious options that will work great here!
This meal is great to prep because it makes a few servings. However, if you don’t want to prep, then the ingredients will stay fresh for a few days in the fridge, so you can also make the meal right when you want it.
