Easy Birthday Cake Protein Balls – no baking required and just 7 ingredients needed! A delicious and healthy snack or treat.

Ingredients

Scale
  • 2/3 cup creamy cashew butter
  • 1/4 cup honey
  • 1/2 teaspoon almond extract or vanilla extract
  • 1/4 cup coconut flour
  • 1/4 cup plant-based vanilla protein powder
  • 3 tablespoons dairy-free white chocolate chips
  • 3 tablespoons vegan rainbow sprinkles (+ more optional for coating)

Instructions

  1. In a bowl mix together cashew butter, honey and almond or vanilla extract
  2. Mix in the coconut flour and protein powder and combine well, then the white chocolate chips and sprinkles
  3. Refrigerate for 15 minutes
  4. Roll into 10-12 balls, and refrigerate for at least another hour before serving
