If you’ve followed HB for any length of time, you know I have quite the affinity for 2 things: cookie dough and cake batter. So to say that I’m kinda-sorta freaking out over this recipe that is a *hybrid* of the two, well…even that would be an understatement.

Ingredients
- 2/3 cup creamy cashew butter
- 1/4 cup honey
- 1/2 teaspoon almond extract or vanilla extract
- 1/4 cup coconut flour
- 1/4 cup plant-based vanilla protein powder
- 3 tablespoons dairy-free white chocolate chips
- 3 tablespoons vegan rainbow sprinkles (+ more optional for coating)
Instructions
- In a bowl mix together cashew butter, honey and almond or vanilla extract
- Mix in the coconut flour and protein powder and combine well, then the white chocolate chips and sprinkles
- Refrigerate for 15 minutes
- Roll into 10-12 balls, and refrigerate for at least another hour before serving

Can I use a different type of flour in these Birthday Cake Protein Balls?
I have tried this recipe with almond flour, and it works. However, the texture of coconut flour works best in this recipe. Generally, I would not recommend using any other flours.
What protein powder should I use?
You can use any of your favorite vanilla protein powder. If you are looking for plant-based, then I love Life Extension’s vanilla pea protein powder. If you are looking for for a whey-based protein powder, then my favorite is Iconic.
What sprinkles should I use?
I love these sprinkles because they are vegan and made with no artificial dyes.
Where can I find dairy-free white chocolate chips?
So far these are the only dairy-free white chocolate chips I can find. I also love these from Bake Believe, because they are low sugar however not dairy-free.
Can I use a different nut butter?
Of course, any creamy nut butter will work. However, I found that for the most cake-like flavor cashew butter is best.
Do I have to use almond or vanilla extract?
No, you can omit if you don’t have. However I find the almond extract lends to more of a cake flavor, surprisingly more than vanilla!
How should I store them?
Store in an airtight container in the refrigerator for up to 10 days.
Can these be made vegan?
Yes! Simply use maple syrup instead of honey (and be sure to use vegan protein powder, white chocolate chips, & sprinkles).
