Dressing ingredients:

  • 1/3 cup fresh lemon juice
  • 1.5 teaspoon dijon mustard
  • 1.5 teaspoon honey (or maple syrup)
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Salad ingredients:

  • one 15 ounce can organic chickpeas, drained and rinsed
  • one 15 ounce can organic white cannellini beans, drained and rinsed
  • 1 cup pearl couscous, cooked as directed
  • 1/2 pint cherry or grape tomatoes, halved
  • 1 cucumber, peeled & diced
  • 1/2 red onion, diced
  • 3/4 cup crumbled feta cheese
  • 3 tablespoons chopped Italian parsley

Instructions

  1. In a mason jar or small bowl, add all dressing ingredients and whisk/shake vigorously until fully combined. Set aside
  2. Add all salad ingredients to a large mixing bowl
  3. Pour dressing over salad and toss until everything is evenly coated
  4. Refrigerate for at least 20 minutes before serving
  5. Store in the refrigerator up to 4 days in an airtight container
