There is no dish quite like NACHOS that brings everyone in the house into the same room. These BBQ Pulled Pork Sweet Potato Nachos are a fun twist on a classic favorite that everyone is going to love!
To make the BBQ pulled pork I used a Hatfield Pork Loin Fillet. I went with their Dry Rub Seasoned Texas Smokehouse, but any of their pork loin fillets would work. Pulled pork is typically made with pork shoulder, and many people don’t know that you can actually make a delicious pulled pork using a less fatty cut like pork loin.

These BBQ Pulled Pork Sweet Potato Nachos are not only delicious, but they’re also an affordable and fun way to switch up a normal weekday dinner. Here’s how to make them!
BBQ Pulled Pork Sweet Potato Nachos
Pulled pork ingredients:
- 1 22oz Hatfield Pork Loin Fillet Dry Rub Seasoned Texas Smokehouse
- 1/2 cup of your favorite BBQ sauce
- 1/2 of an onion, minced
- 2 garlic cloves, minced
- dash of hot sauce (optional)
Nachos ingredients:
- 1 large or 2 small sweet potatoes, sliced into rounds
- 2 tbsp olive oil
- salt & pepper
- 1/2 cup black beans, drained and rinsed
- 1 jalepeno pepper, sliced and seeded (optional)
- 1/2 cup shredded cheese (cheddar or pepper jack best)
- diced avocado
- sour cream
Directions:
Place Hatfield Pork Loin Fillet in slow cooker with onion, garlic, BBQ sauce and hot sauce, making sure everything is evenly distributed. Cook on low for 6-7 hours or high for 3-4 hours, or until the pork loin is cooked through.
Preheat oven to 400 degrees. Toss sweet potato rounds in olive oil and season with salt & pepper. Spread evenly on a baking dish and bake for 20-30 minutes, flipping midway.
When sweet potatoes are done cooking, top them with the cooked BBQ pulled pork, black beans, jalapeños and cheese. Broil for 5 minutes or until cheese is melted. Top with diced avocado and sour cream before serving.
One of the great things about using the Hatfield Pork Loin Fillet Dry Rub Seasoned Texas Smokehouse is that it’s pre-seasoned so well, it doesn’t require additional seasoning. It’s PACKED with flavor.
There are tons of other ways you can get creative with these nachos. You could use regular potatoes for the base, swap the black beans for refried beans, add your favorite salsa, or add your favorite fresh herbs.
