Is there anything more comforting than a warm bowl of oatmeal for breakfast? I’m actually going to say YES, there is, and it’s this BAKED Blueberry Crunch Oatmeal. Le drool.
I love this recipe because it’s super easy to make, and since it’s baked there’s that extra flavor from all of the ingredient getting nice and heated through together. It’s also the perfect combination of textures from the chewy oats, the crunch of the nuts, and a juicy burst from the blueberries.
It’s also super soft and creamy thanks to the brand new Organic Almondmilk (with cashew) from So Delicious. I recently got my hands on all of the new flavors, and they’re so delicious! Pun kind of intended 😉
I was so excited to find out about the new So Delicious Almondmilk because dairy free milk is something I enjoy at a minimum once a day. I regularly use almond milk in my morning coffee, baking, cereal, smoothies & more. I love that So Delicious Organic Almondmilks are USDA certified Organic, Non-GMO project verified, and certified Vegan. There are no artificial flavors, sweeteners, or preservatives, and each flavor is gluten-free, soy-free, carrageenan-free, and dairy-free. Each flavor has 7 or fewer ingredients!
Back to this baked oatmeal, which also happens to be gluten-free and dairy-free. Here’s how to make it.
Baked Blueberry Crunch Oatmeal
Ingredients:
- 2 cups (gluten free) rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped pecans
- 1/4 cup chopped walnuts
- 3/4 cup fresh blueberries
- 1 tbsp dairy-free butter, melted
- 1 egg OR 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
- 1/4 cup brown sugar
- 1 teaspoon pure vanilla extract
- 1 1/2 cups So Delicious Almondmilk
- optional toppings: granola, dairy free yogurt, nut butter, fresh fruit
Directions:
- Preheat the oven to 375 degrees. Grease an 8-inch square baking dish.
- In a large bowl mix together the oats, baking powder, cinnamon, salt, pecans & walnuts.
- Pour mixture into the baking dish. Layer the blueberries evenly over the oat mixture. Set aside.
- In a separate small bowl whisk together the egg, butter, brown sugar, vanilla extract and So Delicious almond milk.
- Pour the wet mixture evenly over the oats.
- Bake for 35-40 minutes, or until the top is golden brown and blueberries begin to burst. Allow to cool slightly before serving and add toppings of choice.
- Store covered in the the refrigerator for up to three days.
