As we get closer to the holiday season, I enjoy coming up with fun and unique recipes I can make for my loved ones that go beyond your typical Thanksgiving meals. When visiting family and friends, I love the idea of bringing something they can enjoy for breakfast or a snack that can add that seasonal holiday flavor to their day.
This recipe for Apple Cinnamon Walnut Loaf is exactly that. It’s cozy, packed with seasonal flavors, and great to make ahead to bring to your holiday gatherings.
Apple Cinnamon Walnut Loaf
Yields one loaf (8 slices) – can easily be doubled!
Ingredients:
- 1/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 egg
- 1/2 tsp vanilla extract
- 1 1/2 all purpose or whole wheat flour
- 1 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 cup + 2 tbsp buttermilk
- 1 cup diced apple
- 1/2 cup chopped California Walnuts
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, beat together butter and sugar until creamy.
- Beat in the egg and vanilla.
- In a separate bowl, combine flour, baking soda, baking powder, cinnamon & salt.
- Add dry ingredients to butter mixer and beat together.
- Slowly add buttermilk and beat just until everything combined.
- Fold in apples and walnuts.
- Pour batter into greased loaf pan and bake for 50-55 minutes, or just until a toothpick comes out clean.
- Let cool for at least 30 minutes before slicing.
This Apple Cinnamon Walnut Loaf is soft, fluffy and the perfect amount of sweetness. And there’s really nothing better than the flavor combination of apple + cinnamon + walnuts.
Serve at room temperature or warm – great with a smear of butter or nut butter.
