Ingredients
- 8 ounces dry pasta (any shape), prepared as directed
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cup whole or 2% milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/3 cup Frank’s Red Hot sauce
- 2 cups shredded sharp cheddar cheese
- 1 lb Just Meats Buffalo Chicken Breast
Instructions
- Cook pasta as directed in salted water
- Cut chicken into smaller (about 1-inch) pieces. Set aside
- Start the cheese sauce by making a roux. In a deep large stovetop pan (or pot) melt butter on medium heat, then whisk in the flour, making sure to whisk out all clumps
- Add milk and continue to whisk while the roux cooks and thickens, about 3-4 minutes. Season with salt, pepper, garlic powder and paprika
- Whisk in hot sauce, then the cheddar cheese until it fully melts. Turn off heat
- Add cooked/drained pasta and chicken and toss to coat entirely in the cheese mixture. Serve immediately

What pasta should I use?
I used rigatoni in this recipe, but the classic macaroni shape would be delicious. You could also use your favorite gluten-free pasta, or a chickpea based pasta for higher protein and fiber.

Can I use regular chicken?
Yes! Diced or shredded chicken breast, chicken thighs or rotisserie would work in this recipe. However, since I used the Buffalo-flavored chicken from Just Meats you may want to add some extra Buffalo sauce for extra flavor.
Can I use other cheese(s)?
A mixture of cheddar and gruyere cheese would be delicious in this recipe! You could even sprinkle a bit of blue cheese on top before serving to go with that Buffalo sauce flavor.
