If you’re anything like me, then you’re a) usually craving a cookie and b) don’t always feel like putting in the time and effort of baking an entire batch. Enter: this EASY Single Serving Vegan Cookie Bowl.
This is one of my go-to’s lately because it’s so simple and quick! Just a few ingredients and you’ve got a perfectly spoon-able cookie bowl, just begging to be topped with ice cream. Plus, it happens to be vegan, gluten-free, grain-free and can easily be made Keto-friendly.

Ingredients
- 2 tablespoons creamy cashew butter
- 1 tablespoon maple syrup
- 1/4 teaspoon vanilla extract
- 3 tablespoons super fine almond flour
- 1/4 teaspoon baking powder
- 1–2 tablespoons dairy-free chocolate chips
Instructions
- In a microwave safe bowl mix together cashew butter, maple syrup & vanilla
- Mix in almond flour and baking powder until fully combined, then mix in chocolate chips
- In the same bowl (or transfer to a ramekin) microwave for 45 seconds. Top with a scoop of your favorite ice cream

Can I use a different type of flour?
I have not tried using any other flours in this recipe. Regular all-purpose flour or oat flour should work. However, I *do not* recommend using coconut flour, as itās a very different consistency than almond flour and would require different ingredients/measurements.
Generally, I recommend usingĀ Bobās Red Mill super fine almond flour.
Can I use a different nut butter?
Of course, any nut butter will work! Generally, I love cashew butter because it lends to the most cookie-like flavor, but peanut butter or almond butter would also be delicious.
What chocolate chips should I use?
For dairy-free I like Enjoy Life (dairy-free) and Hu Kitchen gems (code GRACIE for free shipping!). Additionally, some low sugar options I like (not dairy-free) are Lily’s and Bake Believe.
Can I use a different sweetener?
In this case, I love the flavor of maple syrup, but you can also use honey, regular sugar, coconut sugar, or a monk fruit sweetener.
To make this recipe Keto-friendly:
- Instead of maple syrup use monk fruit sweetener.
- Use unsweetened chocolate chips, like Lily’s or Bake Believe
