I Made It: Snickerdoodle Cake Batter Blondies

A couple of days ago as I was mapping out the week’s content plan for Hungry Blonde, the recipe gods did me a solid in the form of an email from an old GML reader, Melissa. I was trying to decide which version of Cake Batter Blondies to recreate (or repost), and she asked about the recipe for my Snickerdoodle CBB’s. Since it’s the holiday season and cinnamon is all sorts of a Christmas-y flavor, I had my answer!

Snickerdoodle Cake Batter Blondies

Blondie ingredients:

  • 1 box yellow cake mix *
  • 1 tablespoon cinnamon
  • 1/2 cup (1 stick) butter, melted
  • 1 egg, beaten

Frosting ingredients:

  • 3 3/4 cups powdered sugar
  • 1/2 cup (1 stick) butter softened
  • 1 teaspoon vanilla extract

Cinnamon sugar topping:

  • 1/4 cup granulated white sugar
  • 1 tablespoon cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine the cake mix and cinnamon in a large bowl, then mix in the melted butter and egg. (You could use canola oil like in my other CBB recipes, but I think the butter lends to more of that cookie flavor.) The batter will be very dense – almost more like cookie dough. That’s what you want! 
  3. Place batter in a greased 8×8 pan or 8-inch cake pan. Bake for 25-30 minutes or just until the edges turn golden. Do NOT over-bake – it’s better to err on the side of under-baked (trust me).
  4. Let cool for 20 minutes before cutting because the gooey center needs to set. 
  5. In a large bowl beat powdered sugar and softened butter using a mixer until it’s smooth, then mix in the vanilla extract.
  6. Top blondies with the frosting, then a sprinkle of the cinnamon sugar mixture.

* My favorite brand has always been Betty Crocker SuperMoist Yellow Cake Mix. It turns out to be the best texture and cake batter-y flavor!

If you want to skip the frosting, add the cinnamon sugar topping before baking. But I think the frosting works perfectly on these blondies – dare I say they’re almost cinnamon bun-esque? 😉
